last week's NYT restaurant review had me craving dumplings. They reviewed a Ukrainian place in Brighton Beach that did 9 kinds of vareniki. Mmm. (Plus several kinds of pelmeni, meat dumplings, but it was the thought of cherry vareniki that did it for me.)
I know how to do those (OK, kreplach, which are basically the same thing but triangular; less work with the cutting and folding) but I don't have the space :( (you need room to roll out the dough!) Or sour cherry filling, which is one of my favourites. Kreplach, boiled, fried in butter and served with sour cream: one of the best, most fattening dishes ever. I like a potato and farmer cheese filling with onions.
