Tonight I did the Hazelnut-Lemon-Ricotta Pancakes from the NYT a few months back. They're lovely and tender, but a bit too lemony--though 1) "zest of 2 lemons" is a variable quantity and 2) I topped them with sugar instead of honey. (I like honey in things, but I'm not so fond of it as a topping.)
I might try playing with the base recipe, minus the lemons, though. Wonder what else hazelnuts would go with (besides chocolate, of course). Hmm, I could try orange and almond...
(If you do try the recipe, be sure to rub the lemon sugar again before mixing it with the other ingredients; it clumps up after being allowed to stand.)
Speaking of ground nuts, wonder which nut sponge I'll do for Pesach. Or I could be boring and do plain sponge (for those of you wondering how we make cakes without flour, the answer is very finely ground matza [cake meal] and potato starch.) Plus fruit of course. Actually there's a reasonable number of good sweets and desserts for Pesach and there's lots of ways to exercise your creativity without resorting to Manischewitz Passover Chocolate Cake Mix. It's the side dishes that always get me, especially since I don't particularly like matza kugel or farfel. Ah well, it's only 8 days of potatoes. :-)
