1 cheesecake, no cracks! (ok, teeny-tiny, and I do mean tiny, hairline crack...)
I read somewhere that cracking is partly caused by the cake trying to pull away from the sides as it cools. Cheesecake doesn't slip away from the sides of the pan, so it cracks. On the basis of this theory, I tried running a knife between the side of the cake and the pan. Result: no cracks. :)
(also, I'm pretty sure I got it out of the oven at the right time this time; it was firm to the touch but still puffed up. We'll find out tomorrow :) )
